Mojito

The mojito is a cuban drink made with rum, sugar soda water and fresh mint.
Although there are several variations, notably the use of dark rum instead of white rum, make sure yours is made with FRESH
mint; there is no substitute. At one time, it was said that my mojitos were considered to be some of the best
in New Orleans; they should be, I've had a lot of practice! I've made hundreds of them, at private parties, at The Columns
and at Sugar Magnolia, where they were a house specialty. This is a refreshing drink and it is made to go down smooth.
Perfect for a hot summer day by the pool.
Ingredients Fresh Mint Leaves White Sugar (approximately
2 tsp.) Lime Slice or Wedge Juice of 1/2 Lime (fresh squeezed is best) 2 oz. White Rum (I prefer Bacardi Limon) Soda
water (or 7-Up for a sweeter drink) Cracked Ice Method In a mixing glass, add a slice
of lime, sugar and several mint leaves over a couple of ice cubes or a bit of crushed ice. Lightly muddle until the
sugar dissolves and you smell the mint. Fill the glass half way with ice, add rum and squeeze in fresh lime juice and
shake. Strain over cracked ice in a highball glass or double rocks glass. Top with soda water (or 7-Up), garnish with mint
sprig and lime slice and serve.
